Brewmaster seeks perfection Carbon dioxide is then reintroduced to carbonize it.The slightest slip-up — from an inconsistent temperature to a power outage — could ruin hundreds of gallons of beer, said Moss."It takes passion. Every part of this process takes passion," said Moss. "It has to be something that gets into you and makes you want to do the best job you can." Moss wasn't always a beer lover. A former pension plan consultant, he said he used to be just as content to drink the leading national brands of beer as the next guy. Then, in 1979, he took a trip to England that changed everything. "I didn't know what good beer was until I went to Europe," said Moss, who brought back a home brew kit and joined a local club of fellow amateurs. On top of ensuring a fun experience for customers, The HMB Brewing Co. also believes in doing their bit for the community. Every Wednesday night, a portion of profits from food sales is donated to a coastside nonprofit. “We have a unique community,” Meyer says. “It’s economically diverse, and because of the diversities and large agrarian industry, most folks aren’t paid well. We try to look for the most significant service to help.”Although his first home brew was "terrible," Moss said he eventually got the hang of it. "I realized I had a good awareness of hop aromas and flavors," he said. Ever the perfectionist, Moss spends extra time at the restaurant bar at lunch and on weekends in the hopes of overhearing a customer comment on one of his beers. "I want to make sure I'm putting out a beer that people will enjoy, but I don't expect everyone to like what I do," said Moss. "My goal is, when you're finishing a beer to say, 'I want another one.'" |
